- 6 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup finely chopped celery
- 1/4 cup sliced green onions
- 1/2 cup crushed potato chips (for garnish)
- Fresh parsley, chopped (for decoration)
Instructions
- Place the eggs in a saucepan and cover them with cold water.
- Heat over medium-high until the water reaches a rolling boil.
- Once boiling, cover the pan, remove it from the heat, and let it rest for 12 minutes.
- Transfer the eggs to an ice bath for about 5 minutes to cool down.
- Peel the eggs and chop them into small pieces.
- In a large bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper until smooth.
- Gently fold in the chopped eggs, celery, and green onions until well mixed.
- Serve on a bed of crisp lettuce, in a sandwich, or wrapped in a tortilla.
- Sprinkle crushed potato chips on top for extra crunch and garnish with fresh parsley.
Notes
- For an extra kick, mix in a teaspoon of sriracha or your preferred hot sauce into the mayonnaise blend.
- Swap half of the mayonnaise with Greek yogurt for a lighter, protein-packed version.
