- 2 cups cooked chicken, shredded
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- Vegetable oil for frying
Instructions
- In a bowl, combine the shredded chicken, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well until the chicken is evenly coated with the spices.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- While the oil is heating, warm the corn tortillas in a separate pan or microwave until pliable.
- Once the oil is hot, take a tortilla and fill it with a generous amount of the seasoned chicken. Fold the tortilla in half to create a taco shape.
- Carefully place the filled taco in the hot oil and fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
- Repeat with the remaining tortillas and chicken mixture.
- To serve, top each crispy taco with shredded lettuce, diced tomatoes, cheddar cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.
Notes
- For extra crunch, consider adding sliced jalapeños or avocado slices as toppings.
- You can also substitute the chicken with shredded beef or black beans for a vegetarian option.
