Ingredients

  • 1 teaspoon chili powder
  • 1 teaspoon cumin

  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • Vegetable oil for frying

Instructions

  1. In a bowl, combine the shredded chicken, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well until the chicken is evenly coated with the spices.
  2. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  3. While the oil is heating, warm the corn tortillas in a separate pan or microwave until pliable.
  4. Once the oil is hot, take a tortilla and fill it with a generous amount of the seasoned chicken. Fold the tortilla in half to create a taco shape.
  5. Carefully place the filled taco in the hot oil and fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  6. Repeat with the remaining tortillas and chicken mixture.
  7. To serve, top each crispy taco with shredded lettuce, diced tomatoes, cheddar cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.
