Description

A delicious and easy recipe for Crispy Chicken Parmesan, featuring breaded chicken breasts topped with marinara sauce and melted cheese.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably Italian seasoned)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch. Season both sides with salt, pepper, garlic powder, and Italian seasoning.
  3. Set up a breading station: Place the flour in one shallow dish, beat the eggs in a second dish, and put the breadcrumbs in a third dish.
  4. Dredge each chicken breast in flour, shaking off the excess. Dip into the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.
  5. In a large skillet, heat about 1/4 inch of olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
  6. In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the fried chicken breasts on top, then spoon the remaining marinara sauce over each piece. Sprinkle with mozzarella and Parmesan cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired before serving.

Notes

  • For a lighter version, try baking the breaded chicken instead of frying it.
  • You can customize the recipe by adding sautéed vegetables like spinach or mushrooms on top of the chicken before adding the marinara sauce.
