- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 cup buttermilk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 4 sandwich rolls (ciabatta or brioche recommended)
- 1 cup romaine lettuce, chopped
- 1/2 cup Caesar dressing
- Extra Parmesan cheese for garnish (optional)
- Lemon wedges for serving (optional)
Instructions
- In a large bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour or up to overnight for best flavor.
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- In one shallow dish, place the flour. In another shallow dish, combine panko breadcrumbs and grated Parmesan cheese.
- Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each breast in the flour, shaking off the excess, then dip into the breadcrumb mixture, pressing gently to adhere.
- Place the coated chicken breasts on the prepared baking sheet. Bake for 25-30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F).
- While the chicken is baking, prepare the sandwich rolls by toasting them lightly if desired.
- Once the chicken is done, let it rest for 5 minutes before slicing.
- To assemble the sandwiches, spread Caesar dressing on the bottom half of each roll. Top with chopped romaine lettuce, sliced crispy chicken, and additional Parmesan cheese if desired. Place the top half of the roll on each sandwich.
- Serve immediately with lemon wedges on the side for squeezing over the sandwich.

- For a spicy kick, add a teaspoon of cayenne pepper to the flour mixture.
