- 3 cups all-purpose flour
- 6 large eggs
- 4 cups whole milk
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 cup semi-sweet chocolate chips
- 1 tablespoon unsweetened cocoa powder
Instructions
- In a large mixing bowl, whisk together the flour, eggs, milk, melted butter, granulated sugar, salt, and vanilla extract until smooth. Let the batter rest for 30 minutes at room temperature.
- Heat a non-stick skillet over medium heat. Lightly grease with butter or cooking spray.
- Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another 1-2 minutes.
- Transfer the cooked crepe to a plate and repeat with the remaining batter, stacking the crepes as you go. You should have about 20 crepes.
- In a medium bowl, whip the heavy cream and powdered sugar until soft peaks form.
- To assemble, place one crepe on a serving plate. Spread a thin layer of whipped cream over the crepe. Sprinkle a tablespoon of chocolate chips and a light dusting of cocoa powder.
- Repeat the layers until all crepes are used, finishing with a layer of whipped cream and a sprinkle of chocolate chips on top.
- Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld.
Notes
- For a richer flavor, add a layer of chocolate ganache between the crepes by melting 1 cup of chocolate chips with 1/2 cup of heavy cream.
- For a fruit variation, layer fresh berries or sliced bananas between the crepes along with the whipped cream.
