Ingredients

  • 6 large eggs
  • 4 cups whole milk
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon unsweetened cocoa powder

Instructions

  1. In a large mixing bowl, whisk together the flour, eggs, milk, melted butter, granulated sugar, salt, and vanilla extract until smooth. Let the batter rest for 30 minutes at room temperature.
  2. Heat a non-stick skillet over medium heat. Lightly grease with butter or cooking spray.
  3. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another 1-2 minutes.
  4. Transfer the cooked crepe to a plate and repeat with the remaining batter, stacking the crepes as you go. You should have about 20 crepes.
  5. In a medium bowl, whip the heavy cream and powdered sugar until soft peaks form.
  6. To assemble, place one crepe on a serving plate. Spread a thin layer of whipped cream over the crepe. Sprinkle a tablespoon of chocolate chips and a light dusting of cocoa powder.
  7. Repeat the layers until all crepes are used, finishing with a layer of whipped cream and a sprinkle of chocolate chips on top.
  8. Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld.

Notes

  • For a richer flavor, add a layer of chocolate ganache between the crepes by melting 1 cup of chocolate chips with 1/2 cup of heavy cream.
  • For a fruit variation, layer fresh berries or sliced bananas between the crepes along with the whipped cream.
