Description

A comforting and creamy casserole packed with winter vegetables, perfect for warming up on cold days.


Ingredients

Scale
  • 2 cups chopped cauliflower
  • 2 cups chopped broccoli
  • 1 cup sliced carrots
  • 1 cup diced potatoes
  • 1 cup frozen peas
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F.
  2. In a large pot, bring salted water to a boil. Add the cauliflower, broccoli, carrots, and potatoes. Blanch the vegetables for about 5 minutes, then drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
  4. In a large mixing bowl, combine the blanched vegetables, sautéed onion and garlic, heavy cream, cheddar cheese, Parmesan cheese, thyme, rosemary, salt, and pepper. Mix well until all ingredients are evenly coated.
  5. Transfer the vegetable mixture to a greased 9×13-inch baking dish.
  6. In a small bowl, mix the breadcrumbs with a tablespoon of olive oil and a pinch of salt. Sprinkle the breadcrumb mixture evenly over the top of the casserole.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
  8. Let it cool for 5 minutes before serving.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream and use low-fat cheese.
  • Add cooked chicken or turkey for extra protein and heartiness.
  • You can also mix in your favorite herbs for added flavor.
