A comforting and creamy casserole packed with winter vegetables, perfect for warming up on cold days.
Ingredients

- 2 cups chopped cauliflower
- 2 cups chopped broccoli
- 1 cup sliced carrots
- 1 cup diced potatoes
- 1 cup frozen peas
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup breadcrumbs
Instructions
- Preheat your oven to 375°F.
- In a large pot, bring salted water to a boil. Add the cauliflower, broccoli, carrots, and potatoes. Blanch the vegetables for about 5 minutes, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
- In a large mixing bowl, combine the blanched vegetables, sautéed onion and garlic, heavy cream, cheddar cheese, Parmesan cheese, thyme, rosemary, salt, and pepper. Mix well until all ingredients are evenly coated.
- Transfer the vegetable mixture to a greased 9×13-inch baking dish.
- In a small bowl, mix the breadcrumbs with a tablespoon of olive oil and a pinch of salt. Sprinkle the breadcrumb mixture evenly over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
- Let it cool for 5 minutes before serving.
Notes
- For a lighter version, substitute half-and-half for the heavy cream and use low-fat cheese.
- Add cooked chicken or turkey for extra protein and heartiness.
- You can also mix in your favorite herbs for added flavor.
