- 8 ounces mascarpone cheese, softened
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 4 ounces white chocolate, melted and cooled
- 1 cup fresh raspberries
- 1 cup brewed coffee, cooled
- 1 tablespoon coffee liqueur (optional)
- 24 ladyfinger cookies
- Cocoa powder, for dusting
Instructions
- In a large mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium speed until the mixture is smooth and thickened, about 3-4 minutes.
- Gently fold the melted white chocolate into the mascarpone mixture until well combined.
- In a shallow dish, mix the brewed coffee with the coffee liqueur, if using.
- Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them, and layer them in the bottom of a 9×9-inch baking dish.
- Spread half of the mascarpone mixture over the layer of ladyfingers. Sprinkle half of the fresh raspberries on top.
- Repeat the process with another layer of dipped ladyfingers, the remaining mascarpone mixture, and the rest of the raspberries.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust the top with cocoa powder for garnish.
Notes
- For a fruitier twist, add a layer of sliced strawberries or blueberries along with the raspberries.
- Substitute the white chocolate with dark chocolate for a richer flavor profile.
