Ingredients

  • 8 ounces mascarpone cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 ounces white chocolate, melted and cooled
  • 1 cup fresh raspberries
  • 1 cup brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional)
  • 24 ladyfinger cookies
  • Cocoa powder, for dusting

Instructions

  1. In a large mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium speed until the mixture is smooth and thickened, about 3-4 minutes.
  2. Gently fold the melted white chocolate into the mascarpone mixture until well combined.
  3. In a shallow dish, mix the brewed coffee with the coffee liqueur, if using.
  4. Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them, and layer them in the bottom of a 9×9-inch baking dish.
  5. Spread half of the mascarpone mixture over the layer of ladyfingers. Sprinkle half of the fresh raspberries on top.
  6. Repeat the process with another layer of dipped ladyfingers, the remaining mascarpone mixture, and the rest of the raspberries.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  8. Before serving, dust the top with cocoa powder for garnish.

Notes
