- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 (8-ounce) package cream cheese, softened
- 1 cup white chocolate chips
- 1 cup sour cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between, until smooth. Allow to cool slightly.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add the melted white chocolate, sour cream, 1/2 cup sugar, and vanilla extract. Mix until well combined.
- Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.
- Gently fold in the fresh blueberries. Pour the cheesecake batter over the cooled crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour. Remove from the oven and let cool to room temperature.
- Once cooled, refrigerate for at least 4 hours or overnight before serving.
- Slice and serve chilled.
Notes
- For a richer flavor, consider adding a teaspoon of lemon zest to the cheesecake batter.
- You can also top the cheesecake with additional fresh blueberries or a blueberry sauce for an extra burst of flavor.
