Ingredients

  • 4 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons butter
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup frozen peas and carrots
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, bring the vegetable broth to a boil over medium-high heat. Add the elbow macaroni and cook according to package instructions until al dente, about 7-8 minutes. Stir occasionally to prevent sticking.
  2. Once the pasta is cooked, reduce the heat to low. Add the milk, butter, garlic powder, onion powder, and salt and pepper. Stir until the butter is melted and everything is well combined.
  3. Add the shredded cheddar and mozzarella cheeses to the pot, stirring until the cheese is melted and the mixture is creamy.
  4. Fold in the frozen peas and carrots, cooking for an additional 2-3 minutes until the veggies are heated through.
  5. Sprinkle the grated Parmesan cheese on top and stir to combine. Remove from heat and let it sit for a couple of minutes before serving.
