Description

Creamy Tuscan Spaghetti with Jumbo Scallops is a delicious and indulgent pasta dish featuring seared scallops in a rich and creamy sauce with fresh spinach and cherry tomatoes.


Ingredients

  • 8 ounces spaghetti
  • 1 pound jumbo scallops
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium-high heat. Season the scallops with salt and pepper, then add them to the skillet. Sear the scallops for about 2-3 minutes on each side until golden brown and cooked through. Remove the scallops from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
  5. Stir in the spinach and cook until wilted, about 1-2 minutes.
  6. Lower the heat and pour in the heavy cream, stirring to combine. Add the Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is creamy.
  7. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  8. Toss the cooked spaghetti in the sauce until well coated. Gently fold in the scallops.
  9. Serve immediately, garnished with fresh basil.

Notes

  • For a lighter version, substitute half-and-half for heavy cream and reduce the amount of cheese.
  • Add a splash of white wine after sautéing the garlic for extra flavor, allowing it to reduce before adding the cream.
