- 8 ounces spaghetti
- 1 pound jumbo scallops
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat the olive oil over medium-high heat. Season the scallops with salt and pepper, then add them to the skillet. Sear the scallops for about 2-3 minutes on each side until golden brown and cooked through. Remove the scallops from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
- Stir in the spinach and cook until wilted, about 1-2 minutes.
- Lower the heat and pour in the heavy cream, stirring to combine. Add the Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is creamy.
- If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
- Toss the cooked spaghetti in the sauce until well coated. Gently fold in the scallops.
- Serve immediately, garnished with fresh basil.
Notes
- For a lighter version, substitute half-and-half for heavy cream and reduce the amount of cheese.
- Add a splash of white wine after sautéing the garlic for extra flavor, allowing it to reduce before adding the cream.
