Ingredients

  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Boil a pot of salted water and cook the penne pasta until al dente. Drain and set aside.
  2. In a large frying pan, warm the olive oil over medium heat.
  3. Add the finely chopped garlic and sauté for about a minute until fragrant.
  4. Incorporate the diced tomatoes with their juices and stir for 3 to 4 minutes until heated through.
  5. Gradually pour in the heavy cream, then add the dried basil, oregano, salt, and pepper.
  6. Allow the sauce to simmer gently for about 5 minutes, stirring occasionally.
  7. Add the drained penne to the skillet and toss to coat in the sauce.
  8. Remove from heat and mix in the grated Parmesan cheese until melted.
  9. Serve hot, garnished with fresh basil leaves if desired.
