- 8 ounces penne pasta
- 2 tablespoons extra virgin olive oil
- 4 cloves garlic, finely chopped
- 1 can (14.5 ounces) diced tomatoes, with juices
- 1 cup heavy cream
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1/2 cup freshly grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
Instructions
- Boil a pot of salted water and cook the penne pasta until al dente. Drain and set aside.
- In a large frying pan, warm the olive oil over medium heat.
- Add the finely chopped garlic and sauté for about a minute until fragrant.
- Incorporate the diced tomatoes with their juices and stir for 3 to 4 minutes until heated through.
- Gradually pour in the heavy cream, then add the dried basil, oregano, salt, and pepper.
- Allow the sauce to simmer gently for about 5 minutes, stirring occasionally.
- Add the drained penne to the skillet and toss to coat in the sauce.
- Remove from heat and mix in the grated Parmesan cheese until melted.
- Serve hot, garnished with fresh basil leaves if desired.
Notes
- Ensure not to brown the garlic to avoid bitterness.
- Adjust seasoning according to taste.
- For a lighter version, substitute heavy cream with half-and-half.
