Description
Creamy Spinach Cheese Lasagna is a delicious and hearty dish made with layers of lasagna noodles, creamy spinach and cheese filling, and marinara sauce.
Ingredients
Scale
- 12 lasagna noodles
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 10 ounces fresh spinach, chopped
- 15 ounces ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1 large egg
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups marinara sauce
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
- Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine ricotta cheese, 1/2 cup of Parmesan cheese, 1 cup of mozzarella cheese, egg, oregano, salt, and black pepper. Mix well.
- Stir the cooled spinach mixture into the cheese mixture until evenly combined.
- Spread 1 cup of marinara sauce on the bottom of a 9×13 inch baking dish. Layer 4 lasagna noodles over the sauce.
- Spread half of the spinach cheese mixture over the noodles, then add another layer of 1 cup marinara sauce. Repeat with another layer of noodles, the remaining spinach cheese mixture, and another cup of marinara sauce. Top with the final layer of noodles and the remaining marinara sauce.
- Pour heavy cream evenly over the top layer and sprinkle with the remaining mozzarella and Parmesan cheese.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
- Let the lasagna cool for 10 minutes before slicing and serving.
Notes
- For a meatier version, add cooked ground beef or Italian sausage between the layers.
- Substitute the spinach with other greens like kale or Swiss chard for a different flavor profile.
