- 2 cups smoked haddock fillets, skin removed and chopped
- 1 cup heavy cream
- 1 cup whole milk
- 1 cup frozen peas
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried dill
- 1 teaspoon lemon juice
- Salt and pepper to taste
- 1 cup grated cheddar cheese
- 1 cup breadcrumbs
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
- Add the smoked haddock to the skillet and cook for 2-3 minutes, stirring gently to combine with the onion and garlic.
- Pour in the heavy cream and whole milk, then add the frozen peas, dried dill, lemon juice, salt, and pepper. Stir well and let it simmer for 5 minutes until slightly thickened.
- Transfer the mixture to a greased baking dish. Sprinkle the grated cheddar cheese evenly over the top.
- In a small bowl, mix the breadcrumbs with a drizzle of olive oil and a pinch of salt. Sprinkle the breadcrumb mixture over the cheese layer.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute half of the heavy cream with additional milk.
- Add diced potatoes or cooked pasta to the mixture for a heartier dish.
