Ingredients

  • 2 cups smoked haddock fillets, skin removed and chopped
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup frozen peas
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried dill
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 cup grated cheddar cheese
  • 1 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Add the smoked haddock to the skillet and cook for 2-3 minutes, stirring gently to combine with the onion and garlic.
  4. Pour in the heavy cream and whole milk, then add the frozen peas, dried dill, lemon juice, salt, and pepper. Stir well and let it simmer for 5 minutes until slightly thickened.
  5. Transfer the mixture to a greased baking dish. Sprinkle the grated cheddar cheese evenly over the top.
  6. In a small bowl, mix the breadcrumbs with a drizzle of olive oil and a pinch of salt. Sprinkle the breadcrumb mixture over the cheese layer.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.

Notes

  • For a lighter version, substitute half of the heavy cream with additional milk.
  • Add diced potatoes or cooked pasta to the mixture for a heartier dish.
