- 1 pound ground beef
- 1 can (10 ounces) diced tomatoes with green chilies (Rotel)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the garlic powder, onion powder, chili powder, salt, and pepper. Mix well to combine.
- Add the can of diced tomatoes with green chilies (including the juice) to the skillet. Stir to combine and let it simmer for about 3-4 minutes.
- Reduce the heat to low and pour in the heavy cream, stirring until well mixed. Allow it to simmer for another 2-3 minutes until slightly thickened.
- Add the cooked macaroni to the skillet and stir until the pasta is fully coated in the creamy sauce.
- Gradually add the shredded cheddar cheese, stirring until melted and creamy.
- Serve hot, garnished with fresh cilantro or parsley if desired.
Notes
- For a spicier kick, add sliced jalapeños or a dash of hot sauce to the mixture.
- To make it a one-pot meal, cook the pasta directly in the sauce by adding 2 cups of water along with the tomatoes and cream, then simmer until the pasta is cooked through.
