Ingredients

  • 1 pound ground beef
  • 1 can (10 ounces) diced tomatoes with green chilies (Rotel)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the garlic powder, onion powder, chili powder, salt, and pepper. Mix well to combine.
  4. Add the can of diced tomatoes with green chilies (including the juice) to the skillet. Stir to combine and let it simmer for about 3-4 minutes.
  5. Reduce the heat to low and pour in the heavy cream, stirring until well mixed. Allow it to simmer for another 2-3 minutes until slightly thickened.
  6. Add the cooked macaroni to the skillet and stir until the pasta is fully coated in the creamy sauce.
  7. Gradually add the shredded cheddar cheese, stirring until melted and creamy.
  8. Serve hot, garnished with fresh cilantro or parsley if desired.

Notes

  • For a spicier kick, add sliced jalapeños or a dash of hot sauce to the mixture.
  • To make it a one-pot meal, cook the pasta directly in the sauce by adding 2 cups of water along with the tomatoes and cream, then simmer until the pasta is cooked through.
