Description
A quick and delicious creamy garlic salmon pasta dish that is perfect for dinner.
Ingredients

- 8 ounces fettuccine or linguine pasta
- 2 tablespoons olive oil
- 2 salmon fillets (about 6 ounces each)
- Salt and pepper to taste
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon lemon juice
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Season the salmon fillets with salt and pepper, then add them to the skillet. Cook for about 4-5 minutes on each side, or until cooked through and flaky. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and lemon juice, mixing until the cheese is melted and the sauce is creamy.
- Flake the cooked salmon into bite-sized pieces and add it to the sauce. Stir in the cooked pasta, adding reserved pasta water as needed to reach desired consistency.
- Serve immediately, garnished with fresh parsley.
Notes
- For a lighter version, substitute half-and-half for heavy cream and reduce the amount of cheese.
- Add steamed broccoli or spinach for extra vegetables and color in the dish.
