A quick and delicious creamy garlic salmon pasta dish that is perfect for dinner.


Ingredients

  • 8 ounces fettuccine or linguine pasta
  • 2 tablespoons olive oil
  • 2 salmon fillets (about 6 ounces each)
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon lemon juice
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Season the salmon fillets with salt and pepper, then add them to the skillet. Cook for about 4-5 minutes on each side, or until cooked through and flaky. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and lemon juice, mixing until the cheese is melted and the sauce is creamy.
  5. Flake the cooked salmon into bite-sized pieces and add it to the sauce. Stir in the cooked pasta, adding reserved pasta water as needed to reach desired consistency.
  6. Serve immediately, garnished with fresh parsley.

Notes

  • For a lighter version, substitute half-and-half for heavy cream and reduce the amount of cheese.
  • Add steamed broccoli or spinach for extra vegetables and color in the dish.
