- 2 large chicken breasts (about 1 pound), boneless and skinless
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 8 ounces mushrooms, sliced (button or cremini)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and black pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and cook for 4-5 minutes, until they are browned and tender.
- Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to avoid burning.
- Pour in the heavy cream and chicken broth, stirring to combine. Add the dried thyme and paprika, and bring the mixture to a simmer.
- Stir in the grated Parmesan cheese and cook for 2-3 minutes until the sauce thickens slightly.
- Return the chicken to the skillet, spooning the sauce over the top. Let it simmer for another 2-3 minutes to heat the chicken through.
- Garnish with chopped fresh parsley before serving.
Notes
- For a lighter version, substitute half of the heavy cream with low-fat milk or use a dairy-free cream alternative.
- Add spinach or kale to the sauce for extra nutrients and color; simply stir it in during the last few minutes of cooking until wilted.
