Ingredients

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced (button or cremini)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced mushrooms and cook for 4-5 minutes, until they are browned and tender.
  4. Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to avoid burning.
  5. Pour in the heavy cream and chicken broth, stirring to combine. Add the dried thyme and paprika, and bring the mixture to a simmer.
  6. Stir in the grated Parmesan cheese and cook for 2-3 minutes until the sauce thickens slightly.
  7. Return the chicken to the skillet, spooning the sauce over the top. Let it simmer for another 2-3 minutes to heat the chicken through.
  8. Garnish with chopped fresh parsley before serving.

Notes

  • For a lighter version, substitute half of the heavy cream with low-fat milk or use a dairy-free cream alternative.
