  • 1 cup coconut milk
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon chili powder
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh cilantro or green onions for garnish

Instructions

  1. Heat the olive oil in a large saucepan over medium heat. Add the chopped shallot and sauté until soft and translucent, about 4 minutes. Incorporate the minced garlic and cook for another minute until fragrant.
  2. Toss in the cubed potatoes and corn, mixing well. Pour in the stock and bring the mixture to a rolling boil. Lower the heat and let it simmer for 20 minutes, or until the potatoes are fork-tender.
  3. Once the potatoes are cooked, use a potato masher to break down about half of the soup, creating a thicker consistency. If you prefer a smoother texture, transfer half of the soup to a blender, blend until creamy, and return it to the pot.
  4. Mix in the coconut milk, sea salt, black pepper, chili powder, and crushed red pepper flakes (if desired). Gently heat the soup over low heat for about 5 minutes until everything is warmed through.
  5. Ladle the soup into bowls and top with fresh cilantro or sliced green onions before serving.
