A delicious creamy chicken penne pasta dish that is easy to prepare and perfect for any occasion.
Ingredients
Scale
- 2 cups penne pasta
- 1 pound boneless, skinless chicken breasts, diced
- 2 tablespoons olive oil
- 3 cloves garlic, finely chopped
- 1 cup heavy cream
- 1 cup chicken stock
- 1 cup grated Parmesan cheese
- 1 teaspoon dried Italian herbs
- Salt and black pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Boil a pot of salted water and cook the penne pasta until al dente. Drain and set aside.
- In a large frying pan, heat olive oil over medium heat. Add diced chicken, season with salt and black pepper, and sauté until golden brown and fully cooked, about 5-7 minutes. Transfer chicken to a plate.
- In the same pan, add chopped garlic and sauté for about a minute until fragrant.
- Pour in chicken stock and bring to a gentle simmer.
- Stir in heavy cream and dried Italian herbs, simmer for 2-3 minutes until slightly thickened.
- Return cooked chicken to the pan, add penne pasta, and mix thoroughly.
- Gradually sprinkle in grated Parmesan cheese, stirring continuously until the sauce is creamy and cheese has melted. Adjust seasoning with salt and pepper if necessary.
- Serve warm, garnished with fresh parsley.
Notes
- For a lighter version, you can use half-and-half instead of heavy cream.
- Feel free to add vegetables like spinach or sun-dried tomatoes for extra flavor.
- This dish can be made ahead of time and reheated before serving.
