Ingredients

  • 1 can (15 ounces) sweet corn, drained
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup crushed buttery crackers (like Ritz)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, drained corn, cream of chicken soup, sour cream, garlic powder, onion powder, black pepper, and salt. Mix until well combined.
  3. Stir in 3/4 cup of the shredded cheddar cheese.
  4. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
  5. In a separate bowl, mix the crushed crackers with the melted butter until well coated. Sprinkle the cracker mixture evenly over the chicken mixture in the baking dish.
  6. Top with the remaining 1/4 cup of shredded cheddar cheese.
  7. Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
  8. Remove from the oven and let it cool for 5-10 minutes before serving.
