- 2 cups cooked chicken, shredded
- 1 can (15 ounces) sweet corn, drained
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup crushed buttery crackers (like Ritz)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, drained corn, cream of chicken soup, sour cream, garlic powder, onion powder, black pepper, and salt. Mix until well combined.
- Stir in 3/4 cup of the shredded cheddar cheese.
- Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
- In a separate bowl, mix the crushed crackers with the melted butter until well coated. Sprinkle the cracker mixture evenly over the chicken mixture in the baking dish.
- Top with the remaining 1/4 cup of shredded cheddar cheese.
- Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
- Remove from the oven and let it cool for 5-10 minutes before serving.
Notes
- For added flavor, consider mixing in some diced bell peppers or green onions into the chicken mixture.
- Substitute the shredded chicken with cooked ground turkey or a plant-based protein for a different twist.
