Instructions

  1. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large saucepan, melt the butter over medium heat.
  3. Whisk in the flour and cook for about 1 minute, stirring constantly, until it forms a roux.
  4. Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens (about 5-7 minutes).
  5. Stir in the garlic powder, onion powder, smoked paprika, salt, and black pepper.
  6. Remove the saucepan from heat and add the shredded cheddar, Monterey Jack, and Parmesan cheeses. Stir until the cheeses are completely melted and the sauce is smooth.
  7. Add the cooked macaroni to the cheese sauce and mix well to combine.
  8. Transfer the mac and cheese to a greased baking dish and bake in a preheated oven at 350°F for 20 minutes, or until bubbly and golden on top.
