Ingredients

  • 1 pound ground beef
  • 8 ounces fresh or frozen cheese tortellini
  • 8 ounces mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and sliced mushrooms to the skillet. Cook for another 4-5 minutes until the mushrooms are tender.
  3. Push the vegetables to the side of the skillet and add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat if necessary.
  4. Stir in the beef broth, heavy cream, Italian seasoning, salt, and pepper. Bring the mixture to a gentle simmer.
  5. Add the tortellini to the skillet and cook according to package instructions, usually about 3-5 minutes, until the tortellini is tender and heated through.
  6. Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning if needed.
  7. Remove from heat and garnish with fresh parsley before serving.

Notes

  • For a lighter version, substitute ground turkey for ground beef and use half-and-half instead of heavy cream.
  • Add spinach or kale during the last minute of cooking for extra nutrients and color.
