- 1 pound ground beef
- 8 ounces fresh or frozen cheese tortellini
- 8 ounces mushrooms, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and sliced mushrooms to the skillet. Cook for another 4-5 minutes until the mushrooms are tender.
- Push the vegetables to the side of the skillet and add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat if necessary.
- Stir in the beef broth, heavy cream, Italian seasoning, salt, and pepper. Bring the mixture to a gentle simmer.
- Add the tortellini to the skillet and cook according to package instructions, usually about 3-5 minutes, until the tortellini is tender and heated through.
- Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning if needed.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute ground turkey for ground beef and use half-and-half instead of heavy cream.
- Add spinach or kale during the last minute of cooking for extra nutrients and color.
