Ingredients

- 2 cups fresh apricots, pitted and chopped
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 cup heavy cream
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a medium bowl, combine the chopped apricots, sugar, and lemon juice. Let it sit for about 30 minutes to allow the apricots to release their juices.
- After 30 minutes, mash the apricot mixture with a fork or potato masher until it reaches your desired consistency (smooth or chunky).
- In a separate large bowl, whisk together the heavy cream, whole milk, vanilla extract, and salt until well combined.
- Stir the apricot mixture into the cream mixture until fully incorporated.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes.
- Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
- Before serving, let the ice cream sit at room temperature for a few minutes to soften slightly for easier scooping.
Notes
- For a richer flavor, add a tablespoon of almond extract to the cream mixture.
- Substitute half of the apricots with peaches or nectarines for a delicious fruit blend.
