Instructions
- In a mixing bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Add the lemon juice and lemon zest, folding gently until incorporated.
- Spoon the mixture into serving dishes or a large serving bowl and refrigerate for at least 2 hours to set.
- In a small saucepan, combine the blueberries, granulated sugar, and water. Cook over medium heat for about 5 minutes, stirring gently until the blueberries start to burst and the mixture thickens slightly. Remove from heat and let cool.
