- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 cup cold water
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 tablespoon lemon juice
- Powdered sugar for dusting
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Gradually add the cold water, stirring until the dough comes together. Do not overmix.
- Turn the dough out onto a lightly floured surface and roll it out to about 1/4 inch thick.
- Cut the dough into circles using a cookie cutter or a glass, about 3 inches in diameter.
- Place a small spoonful of mixed berries (tossed with lemon juice) in the center of each circle.
- Fold the dough over the filling to create a half-moon shape and pinch the edges to seal.
- Place the pastry balls on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
- While the pastry balls are baking, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
- Once the pastry balls are done, let them cool slightly before serving.
- Serve warm or at room temperature, topped with a dollop of whipped cream and a dusting of powdered sugar.
Notes
- For a richer flavor, consider adding a teaspoon of almond extract to the whipped cream.
- You can also substitute the mixed berries with chocolate chips or diced peaches for a different twist.
