Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup cold water
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tablespoon lemon juice
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  4. Gradually add the cold water, stirring until the dough comes together. Do not overmix.
  5. Turn the dough out onto a lightly floured surface and roll it out to about 1/4 inch thick.
  6. Cut the dough into circles using a cookie cutter or a glass, about 3 inches in diameter.
  7. Place a small spoonful of mixed berries (tossed with lemon juice) in the center of each circle.
  8. Fold the dough over the filling to create a half-moon shape and pinch the edges to seal.
  9. Place the pastry balls on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
  10. While the pastry balls are baking, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  11. Once the pastry balls are done, let them cool slightly before serving.
  12. Serve warm or at room temperature, topped with a dollop of whipped cream and a dusting of powdered sugar.
