Instructions
- In a skillet over medium heat, add olive oil and corn kernels. Sauté for about 5 minutes until the corn is slightly charred.
- Stir in the shredded chicken, chili powder, garlic powder, cumin, salt, and pepper. Cook for an additional 3-4 minutes until heated through.
- While the chicken and corn mixture is cooking, warm the corn tortillas in a separate skillet or microwave until pliable.
- In a small bowl, mix together the mayonnaise and lime juice to create a creamy sauce.
- To assemble the tacos, place a generous scoop of the chicken and corn mixture onto each tortilla.
- Drizzle the creamy sauce over the filling, then sprinkle with crumbled queso fresco and chopped cilantro.
- Top with avocado slices and serve with lime wedges on the side.
