Ingredients

  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup white chocolate chips, melted
  • 1 cup fresh or frozen cranberries, roughly chopped
  • 1 cup sour cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh cranberries and white chocolate shavings for garnish (optional)

Instructions

  1. Preheat the oven to 325°F. Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the vanilla extract and mix until combined.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the melted white chocolate until fully incorporated. Gently fold in the chopped cranberries.
  5. Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  6. Turn off the oven and crack the oven door, allowing the cheesecake to cool gradually for about 1 hour.
  7. In a small bowl, mix together the sour cream, powdered sugar, and vanilla extract. Spread the mixture evenly over the cooled cheesecake.
  8. Refrigerate for at least 4 hours, preferably overnight, before serving.
  9. To serve, carefully remove the sides of the springform pan. Garnish with fresh cranberries and white chocolate shavings if desired.

Notes

  • For a chocolate crust, substitute chocolate cookie crumbs for the graham cracker crumbs.
