- 2 cups fresh or frozen cranberries
- 1 cup granulated sugar, divided
- 1 cup water
- 1 cup strong brewed coffee, cooled
- 1/2 cup coffee liqueur (optional)
- 1 cup heavy cream
- 8 ounces mascarpone cheese, softened
- 1 teaspoon vanilla extract
- 1 package (7 ounces) ladyfinger cookies
- Cocoa powder for dusting
Instructions
- In a small saucepan, combine cranberries, 1/2 cup sugar, and water. Bring to a boil over medium heat, then reduce heat and simmer for about 10 minutes until cranberries burst and mixture thickens. Remove from heat and let cool.
- In a shallow dish, mix brewed coffee and coffee liqueur (if using). Dip each ladyfinger into the coffee mixture for about 1-2 seconds, ensuring they are soaked but not soggy.
- In a large bowl, whip heavy cream with remaining 1/2 cup sugar and vanilla extract until soft peaks form. Gently fold in mascarpone cheese until smooth and creamy.
- To assemble, spread a layer of the mascarpone mixture in the bottom of a 9×9-inch dish. Layer half of the soaked ladyfingers on top, followed by half of the cranberry mixture. Repeat with another layer of mascarpone, ladyfingers, and cranberries. Finish with a final layer of mascarpone.
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld. Before serving, dust the top with cocoa powder.
Notes
- For a festive twist, consider adding a splash of orange liqueur to the cranberry mixture.
- You can substitute the cranberries with raspberries or strawberries for a different flavor profile.
