A festive and indulgent dessert combining the tartness of cranberries with the creaminess of mascarpone, perfect for holiday gatherings.


Ingredients

  • 2 cups fresh or frozen cranberries
  • 1 cup granulated sugar, divided
  • 1 cup water
  • 1 cup strong brewed coffee, cooled
  • 1/2 cup coffee liqueur (optional)
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract
  • 1 package (7 ounces) ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. In a small saucepan, combine cranberries, 1/2 cup sugar, and water. Bring to a boil over medium heat, then reduce heat and simmer for about 10 minutes until cranberries burst and mixture thickens. Remove from heat and let cool.
  2. In a shallow dish, mix brewed coffee and coffee liqueur (if using). Dip each ladyfinger into the coffee mixture for about 1-2 seconds, ensuring they are soaked but not soggy.
  3. In a large bowl, whip heavy cream with remaining 1/2 cup sugar and vanilla extract until soft peaks form. Gently fold in mascarpone cheese until smooth and creamy.
  4. To assemble, spread a layer of the mascarpone mixture in the bottom of a 9×9-inch dish. Layer half of the soaked ladyfingers on top, followed by half of the cranberry mixture. Repeat with another layer of mascarpone, ladyfingers, and cranberries. Finish with a final layer of mascarpone.
  5. Cover and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld. Before serving, dust the top with cocoa powder.
