Description

A delicious and savory dish featuring chicken breasts stuffed with a flavorful mixture of spinach, dried cranberries, and creamy brie cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup dried cranberries, chopped
  • 4 ounces brie cheese, rind removed and cut into small pieces
  • 1/4 cup cream cheese, softened
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, combine the chopped spinach, dried cranberries, brie cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Using a sharp knife, create a pocket in each chicken breast by cutting horizontally through the thickest part, being careful not to cut all the way through.
  4. Stuff each chicken breast with the cranberry and spinach mixture, securing the opening with toothpicks if necessary.
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  6. Drizzle with balsamic vinegar if using, then transfer the skillet to the preheated oven. Bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Remove from the oven and let the chicken rest for 5 minutes before serving.

Notes

  • For a lighter version, use low-fat cream cheese and reduce the amount of brie.
  • Add chopped walnuts or pecans to the stuffing for extra crunch and flavor.
