- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup dried cranberries, chopped
- 4 ounces brie cheese, rind removed and cut into small pieces
- 1/4 cup cream cheese, softened
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, combine the chopped spinach, dried cranberries, brie cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Using a sharp knife, create a pocket in each chicken breast by cutting horizontally through the thickest part, being careful not to cut all the way through.
- Stuff each chicken breast with the cranberry and spinach mixture, securing the opening with toothpicks if necessary.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
- Drizzle with balsamic vinegar if using, then transfer the skillet to the preheated oven. Bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes before serving.
Notes
- For a lighter version, use low-fat cream cheese and reduce the amount of brie.
- Add chopped walnuts or pecans to the stuffing for extra crunch and flavor.
