Description
Cranberry Orange Chicken is a sweet and savory dish featuring tender chicken thighs coated in a tangy cranberry-orange sauce.
Ingredients
Scale
- 2 pounds boneless, skinless chicken thighs
- 1 cup fresh or frozen cranberries
- 1/2 cup orange juice
- 1/4 cup honey
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Zest of 1 orange
Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, combine the cranberries, orange juice, honey, soy sauce, garlic powder, onion powder, salt, black pepper, and orange zest. Mix well to create the sauce.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs and sear for about 5 minutes on each side until golden brown.
- Pour the cranberry-orange sauce over the chicken in the skillet, ensuring the chicken is well coated.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes before serving.
Notes
- For a thicker sauce, you can simmer the cranberry-orange mixture on the stove for an additional 5-10 minutes before pouring it over the chicken.
- Substitute chicken thighs with chicken breasts for a leaner option, adjusting the cooking time as needed to ensure they remain juicy.
