- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 celery stalk, diced
- 1/4 cup all-purpose flour
- 4 cups seafood stock or chicken broth
- 1 cup heavy cream
- 1 cup cooked crab meat, shredded
- 1 cup cooked shrimp, peeled and deveined
- 1 teaspoon Old Bay seasoning
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- In a large pot, heat the olive oil and butter over medium heat. Add the onion, garlic, carrot, and celery. Sauté for about 5 minutes, or until the vegetables are softened.
- Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for an additional 2 minutes to remove the raw flour taste.
- Gradually whisk in the seafood stock or chicken broth, ensuring there are no lumps. Bring the mixture to a simmer and cook for about 10 minutes, allowing it to thicken slightly.
- Stir in the heavy cream, crab meat, shrimp, Old Bay seasoning, paprika, salt, and pepper. Simmer for another 5-7 minutes until the seafood is heated through.
- Taste and adjust seasoning if necessary. Remove from heat and let it cool slightly before serving.
- Ladle the bisque into bowls and garnish with fresh parsley. Serve with lemon wedges on the side.

- For a spicier kick, add a pinch of cayenne pepper or a few dashes of hot sauce to the bisque.
