A delicious and comforting Mediterranean soup made with green olives, perfect for a cozy meal.
Ingredients

- 2 cups green olives, pitted and roughly chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 medium potato, peeled and diced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced potato, vegetable broth, thyme, oregano, and chopped green olives to the pot. Bring to a boil, then reduce heat and let simmer for 20 minutes, or until the potatoes are tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.
- Stir in the lemon juice and season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley if desired.
Notes
- For a creamier texture, add 1/2 cup of heavy cream or coconut milk after blending.
- Experiment with different herbs such as basil or dill for a unique flavor twist.
