Ingredients

  • 2 cups green olives, pitted and roughly chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 medium potato, peeled and diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the diced potato, vegetable broth, thyme, oregano, and chopped green olives to the pot. Bring to a boil, then reduce heat and let simmer for 20 minutes, or until the potatoes are tender.
  4. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.
  5. Stir in the lemon juice and season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley if desired.
