Cowboy Casserole is a quick and delicious family meal featuring ground beef, tater tots, and cheese, baked to perfection.


Ingredients

  • 2 cups frozen tater tots
  • 1 pound ground beef
  • 1 small onion, diced
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F.
  2. In a large skillet over medium heat, brown the ground beef with the diced onion until the meat is fully cooked and the onion is translucent, about 5-7 minutes. Drain any excess fat.
  3. Stir in the corn, black beans, cream of mushroom soup, milk, garlic powder, chili powder, salt, and pepper. Mix well until everything is combined and heated through, about 3-4 minutes.
  4. Spread the beef mixture evenly in a 9×13-inch baking dish.
  5. Layer the frozen tater tots on top of the beef mixture.
  6. Sprinkle the shredded cheddar cheese over the tater tots.
  7. Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
  8. Let the casserole cool for about 5 minutes before serving.

Notes

  • For added flavor, try mixing in some diced bell peppers or jalapeños with the beef mixture.
  • You can also substitute ground turkey or chicken for a leaner option.
