Cowboy Casserole is a quick and delicious family meal featuring ground beef, tater tots, and cheese, baked to perfection.

- 2 cups frozen tater tots
- 1 pound ground beef
- 1 small onion, diced
- 1 can (15 ounces) corn, drained
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (10.5 ounces) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F.
- In a large skillet over medium heat, brown the ground beef with the diced onion until the meat is fully cooked and the onion is translucent, about 5-7 minutes. Drain any excess fat.
- Stir in the corn, black beans, cream of mushroom soup, milk, garlic powder, chili powder, salt, and pepper. Mix well until everything is combined and heated through, about 3-4 minutes.
- Spread the beef mixture evenly in a 9×13-inch baking dish.
- Layer the frozen tater tots on top of the beef mixture.
- Sprinkle the shredded cheddar cheese over the tater tots.
- Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
- Let the casserole cool for about 5 minutes before serving.
Notes
- For added flavor, try mixing in some diced bell peppers or jalapeños with the beef mixture.
- You can also substitute ground turkey or chicken for a leaner option.
- For a vegetarian version, replace the meat with sautéed mushrooms and increase the beans or add some diced zucchini.
