Delicious Cowboy Butter Chicken Skewers marinated in ranch dressing and grilled to perfection.
Ingredients

- 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/2 cup ranch dressing
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder (adjust to taste)
- Salt and black pepper, to taste
- Wooden or metal skewers
Instructions
- Heat your grill to a medium-high temperature. If using wooden skewers, soak them in water for at least 30 minutes.
- In a mixing bowl, whisk together ranch dressing, olive oil, apple cider vinegar, garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper until well combined.
- Toss the chicken cubes in the marinade until thoroughly coated. Cover and refrigerate for a minimum of 30 minutes, or up to 2 hours.
- Thread the marinated chicken onto the skewers, leaving space between each piece for even cooking.
- Grill the skewers for approximately 10-12 minutes, turning occasionally, until the internal temperature reaches 165°F.
- Allow the skewers to rest for a few minutes before serving.
Notes
- For an extra kick, add a dash of hot sauce to the marinade.
- Pair with a refreshing cucumber salad or roasted potatoes for a complete meal.
