Description

Delicious Cowboy Butter Chicken Skewers marinated in ranch dressing and grilled to perfection.


Ingredients

  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/2 cup ranch dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder (adjust to taste)
  • Salt and black pepper, to taste
  • Wooden or metal skewers

Instructions

  1. Heat your grill to a medium-high temperature. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a mixing bowl, whisk together ranch dressing, olive oil, apple cider vinegar, garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper until well combined.
  3. Toss the chicken cubes in the marinade until thoroughly coated. Cover and refrigerate for a minimum of 30 minutes, or up to 2 hours.
  4. Thread the marinated chicken onto the skewers, leaving space between each piece for even cooking.
  5. Grill the skewers for approximately 10-12 minutes, turning occasionally, until the internal temperature reaches 165°F.
  6. Allow the skewers to rest for a few minutes before serving.

Notes

  • For an extra kick, add a dash of hot sauce to the marinade.
