Ingredients

- 1 cup cottage cheese
- 1/2 cup creamy peanut butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder (optional for chocolate flavor)
- 1/4 cup milk (dairy or non-dairy)
- A pinch of salt
Instructions
- In a blender or food processor, combine the cottage cheese, peanut butter, honey (or maple syrup), vanilla extract, cocoa powder (if using), milk, and salt.
- Blend on high speed until the mixture is smooth and creamy, scraping down the sides as needed.
- Taste and adjust sweetness if necessary by adding more honey or maple syrup.
- Once blended, transfer the mousse to serving bowls or cups.
- Chill in the refrigerator for at least 30 minutes to allow the flavors to meld and the mousse to firm up.
- Serve chilled, optionally topped with chopped peanuts, chocolate shavings, or fresh fruit.
Notes
- For a fruitier version, blend in 1 ripe banana or 1/2 cup of your favorite berries before chilling.
- To make it a bit more indulgent, fold in some whipped cream after blending for a lighter texture.
