  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • ½ cup mini chocolate chips
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition. Stir in sour cream and flour until just combined. Fold in the mini chocolate chips.
  6. Pour the cheesecake filling over the cooled crust and spread evenly. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  7. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Then refrigerate for at least 4 hours or overnight.
  8. For the cookie dough topping, in a medium bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  9. Mix in the vanilla extract. Gradually add the flour and salt, mixing until combined. Stir in the mini chocolate chips and milk until the dough comes together.
  10. Once the cheesecake is fully chilled, spread the cookie dough topping evenly over the top. Slice and serve chilled.

Notes

  • For a chocolate crust, substitute chocolate cookie crumbs for the graham cracker crumbs.
