Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in sour cream and flour until just combined. Fold in the mini chocolate chips.
- Pour the cheesecake filling over the cooled crust and spread evenly. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Then refrigerate for at least 4 hours or overnight.
- For the cookie dough topping, in a medium bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the vanilla extract. Gradually add the flour and salt, mixing until combined. Stir in the mini chocolate chips and milk until the dough comes together.
- Once the cheesecake is fully chilled, spread the cookie dough topping evenly over the top. Slice and serve chilled.
Notes
- For a chocolate crust, substitute chocolate cookie crumbs for the graham cracker crumbs.
- Add a drizzle of chocolate or caramel sauce on top for extra flavor and presentation.
