A refreshing Cold Sun-Dried Tomato Pasta Salad perfect for summer gatherings.
Ingredients

- 8 ounces rotini pasta
- 1 cup sun-dried tomatoes in oil, drained and chopped
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella balls, halved
- 1/2 cup black olives, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooled pasta, sun-dried tomatoes, cherry tomatoes, mozzarella balls, black olives, red onion, and fresh basil.
- In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled, garnished with additional basil if desired.

- For a protein boost, add grilled chicken or chickpeas.
- Swap out the mozzarella for feta cheese for a tangy flavor.
