Description

A refreshing Cold Sun-Dried Tomato Pasta Salad perfect for summer gatherings.


Ingredients

  • 8 ounces rotini pasta
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, sun-dried tomatoes, cherry tomatoes, mozzarella balls, black olives, red onion, and fresh basil.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled, garnished with additional basil if desired.
