Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/3 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, and melted butter. Mix until well combined.
  3. Add the egg and vanilla extract to the banana mixture, stirring until fully incorporated.
  4. In a separate bowl, whisk together the baking soda, salt, flour, and ground cinnamon.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to overmix. If using, fold in the chopped nuts and chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For a streusel topping, mix 1/4 cup brown sugar, 1/4 cup flour, and 2 tablespoons of cold butter until crumbly, and sprinkle it on top of the batter before baking.
  • Substitute half of the all-purpose flour with whole wheat flour for a healthier twist.
