Description
A delicious blend of coffee cake and banana bread, perfect for breakfast or a snack.
Ingredients
Scale
- 2 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1/3 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 cup chopped walnuts or pecans (optional)
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, and melted butter. Mix until well combined.
- Add the egg and vanilla extract to the banana mixture, stirring until fully incorporated.
- In a separate bowl, whisk together the baking soda, salt, flour, and ground cinnamon.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to overmix. If using, fold in the chopped nuts and chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For a streusel topping, mix 1/4 cup brown sugar, 1/4 cup flour, and 2 tablespoons of cold butter until crumbly, and sprinkle it on top of the batter before baking.
- Substitute half of the all-purpose flour with whole wheat flour for a healthier twist.
