Description

Classic French Onion Soup is a rich and comforting dish made with caramelized onions, beef broth, and topped with melted Gruyère cheese.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 large yellow onions, thinly sliced
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 4 cloves garlic, minced
  • 8 cups beef broth
  • 1 cup dry white wine
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 bay leaf
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 8 slices of French bread, toasted
  • 2 cups shredded Gruyère cheese

Instructions

  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the sliced onions, salt, and sugar. Cook, stirring frequently, for about 30-40 minutes, until the onions are caramelized and golden brown.
  3. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Pour in the beef broth and white wine. Add the thyme, bay leaf, and Worcestershire sauce.
  5. Bring the soup to a simmer and cook for 20-30 minutes. Season with salt and pepper to taste.
  6. Preheat the broiler.
  7. Ladle the soup into oven-safe bowls and place a slice of toasted French bread on top of each bowl.
  8. Generously sprinkle the shredded Gruyère cheese over the bread.
  9. Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
  10. Carefully remove the bowls from the oven and let them cool slightly before serving.

Notes

  • For a richer flavor, consider using a combination of beef and chicken broth.
  • You can also add a splash of sherry or brandy for an extra depth of flavor.
  • For a vegetarian version, substitute vegetable broth and use a vegan cheese alternative.
