- 4 large yellow onions, thinly sliced

- 4 cloves garlic, minced
- 8 cups beef broth
- 1 cup dry white wine
- 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 bay leaf
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 8 slices of French bread, toasted
- 2 cups shredded Gruyère cheese
Instructions
- In a large pot, melt the butter and olive oil over medium heat.
- Add the sliced onions, salt, and sugar. Cook, stirring frequently, for about 30-40 minutes, until the onions are caramelized and golden brown.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Pour in the beef broth and white wine. Add the thyme, bay leaf, and Worcestershire sauce.
- Bring the soup to a simmer and cook for 20-30 minutes. Season with salt and pepper to taste.
- Preheat the broiler.
- Ladle the soup into oven-safe bowls and place a slice of toasted French bread on top of each bowl.
- Generously sprinkle the shredded Gruyère cheese over the bread.
- Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
- Carefully remove the bowls from the oven and let them cool slightly before serving.
Notes
- For a richer flavor, consider using a combination of beef and chicken broth.
- You can also add a splash of sherry or brandy for an extra depth of flavor.
- For a vegetarian version, substitute vegetable broth and use a vegan cheese alternative.
