- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Zest of 1 lime
Instructions
- In a medium bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper until well coated.
- Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the diced avocado, cherry tomatoes, cucumber, red onion, and cilantro.
- Add the cooked shrimp to the bowl with the vegetables. Drizzle with lime juice and sprinkle lime zest over the top. Gently toss to combine.
- Serve immediately or chill in the refrigerator for 15-20 minutes before serving for a refreshing taste.

- For added crunch, consider adding 1/4 cup of chopped bell peppers or a handful of mixed greens.
- Substitute the shrimp with grilled chicken or tofu for a different protein option.
