  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Zest of 1 lime

Instructions

  1. In a medium bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper until well coated.
  2. Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the diced avocado, cherry tomatoes, cucumber, red onion, and cilantro.
  4. Add the cooked shrimp to the bowl with the vegetables. Drizzle with lime juice and sprinkle lime zest over the top. Gently toss to combine.
  5. Serve immediately or chill in the refrigerator for 15-20 minutes before serving for a refreshing taste.
