Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 teaspoon ground cinnamon
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 325°F. Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with 1 cup granulated sugar until smooth and creamy. Add the vanilla extract and mix until combined.
  4. Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
  5. In a small bowl, mix together the ground cinnamon, sour cream, and heavy cream. Gently fold this mixture into the cream cheese batter until just combined.
  6. Pour the cream cheese mixture over the cooled crust in the springform pan.
  7. Bake for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, letting the cheesecake cool in the oven for 1 hour.
  8. Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, to set completely.
  9. Before serving, whisk together the powdered sugar and milk in a small bowl to create a glaze. Drizzle the glaze over the top of the cheesecake.

Notes
