  • 1 1/2 cups rhubarb, chopped (fresh or frozen)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 tablespoon brown sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg.
  3. In a large mixing bowl, cream together the granulated sugar and softened butter until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.
  5. Fold in the chopped rhubarb and nuts (if using) until evenly distributed.
  6. Pour the batter into the prepared loaf pan. In a small bowl, mix together the brown sugar and cinnamon for the topping, then sprinkle it evenly over the batter.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For added flavor, try adding a teaspoon of lemon zest to the batter.
  • If you prefer a sweeter bread, increase the sugar by 1/4 cup.
