- 1 cup granulated sugar
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup diced angel food cake
- Mint leaves for garnish
Instructions
- Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
- Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat on high speed until the mixture is glossy and stiff peaks form.
- Gently fold in the vinegar and cornstarch until just combined.
- Spoon the meringue mixture onto the prepared baking sheet, shaping it into a circle about 8 inches in diameter.
- Bake for 1 hour, then turn off the oven and let the meringue cool completely inside the oven with the door slightly ajar.
- Once cooled, carefully transfer the meringue to a serving dish or trifle bowl.
- In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
- Layer the diced angel food cake on top of the meringue, followed by a layer of mixed berries.
- Spread the whipped cream over the berries and top with additional berries and mint leaves for garnish.
Notes
- For a festive twist, try adding a splash of orange or lemon zest to the whipped cream for added flavor.
