  • 1 cup diced angel food cake
  • Mint leaves for garnish

Instructions

  1. Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
  3. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat on high speed until the mixture is glossy and stiff peaks form.
  4. Gently fold in the vinegar and cornstarch until just combined.
  5. Spoon the meringue mixture onto the prepared baking sheet, shaping it into a circle about 8 inches in diameter.
  6. Bake for 1 hour, then turn off the oven and let the meringue cool completely inside the oven with the door slightly ajar.
  7. Once cooled, carefully transfer the meringue to a serving dish or trifle bowl.
  8. In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  9. Layer the diced angel food cake on top of the meringue, followed by a layer of mixed berries.
  10. Spread the whipped cream over the berries and top with additional berries and mint leaves for garnish.
