Description

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 pound chorizo sausage, casings removed
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
  2. Add the minced garlic and diced bell peppers to the skillet, cooking for an additional 2-3 minutes until the peppers are tender.
  3. Push the vegetables to one side of the skillet and add the chorizo. Cook for about 5 minutes, breaking it up with a spoon until browned and cooked through.
  4. Add the chicken pieces to the skillet, stirring to combine with the chorizo and vegetables. Season with smoked paprika, cumin, chili powder, salt, and pepper. Cook for about 8-10 minutes, or until the chicken is cooked through.
  5. Stir in the cooked rice and mix well until everything is heated through.
  6. Sprinkle the shredded cheddar cheese on top, cover the skillet, and let it sit for 2-3 minutes until the cheese is melted.
  7. Remove from heat, garnish with fresh cilantro, and serve with lime wedges on the side.
