- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 pound chorizo sausage, casings removed
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
- Add the minced garlic and diced bell peppers to the skillet, cooking for an additional 2-3 minutes until the peppers are tender.
- Push the vegetables to one side of the skillet and add the chorizo. Cook for about 5 minutes, breaking it up with a spoon until browned and cooked through.
- Add the chicken pieces to the skillet, stirring to combine with the chorizo and vegetables. Season with smoked paprika, cumin, chili powder, salt, and pepper. Cook for about 8-10 minutes, or until the chicken is cooked through.
- Stir in the cooked rice and mix well until everything is heated through.
- Sprinkle the shredded cheddar cheese on top, cover the skillet, and let it sit for 2-3 minutes until the cheese is melted.
- Remove from heat, garnish with fresh cilantro, and serve with lime wedges on the side.

- For a spicier kick, add diced jalapeños or a dash of hot sauce during cooking.
- Substitute quinoa or cauliflower rice for a lower-carb option while maintaining flavor and texture.
