- 1 cup unsalted butter (2 sticks)
- 8 ounces semi-sweet chocolate, chopped
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup all-purpose flour

- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon instant coffee granules (optional)
- Chocolate shavings or cocoa powder for garnish (optional)

- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper, leaving some overhang for easy removal.
- In a medium saucepan over low heat, melt the butter and chopped chocolate together, stirring until smooth. Remove from heat and let it cool slightly.
- In a large mixing bowl, whisk together the sugar and vanilla extract. Add the melted chocolate mixture and stir until well combined.
- Add the eggs one at a time, mixing well after each addition. Gently fold in the flour and salt until just combined. Be careful not to overmix.
- Pour the brownie batter into the prepared baking pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the brownies to cool completely in the pan.
- While the brownies are cooling, prepare the mousse. In a mixing bowl, whip the heavy cream, powdered sugar, and instant coffee granules (if using) until stiff peaks form.
- Once the brownies are completely cooled, spread the whipped chocolate mousse evenly over the top. Chill in the refrigerator for at least 1 hour to set.
- Before serving, garnish with chocolate shavings or a dusting of cocoa powder if desired. Cut into squares and enjoy!
