  • 8 ounces semi-sweet chocolate, chopped
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon instant coffee granules (optional)
  • Chocolate shavings or cocoa powder for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper, leaving some overhang for easy removal.
  2. In a medium saucepan over low heat, melt the butter and chopped chocolate together, stirring until smooth. Remove from heat and let it cool slightly.
  3. In a large mixing bowl, whisk together the sugar and vanilla extract. Add the melted chocolate mixture and stir until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Gently fold in the flour and salt until just combined. Be careful not to overmix.
  5. Pour the brownie batter into the prepared baking pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the brownies to cool completely in the pan.
  6. While the brownies are cooling, prepare the mousse. In a mixing bowl, whip the heavy cream, powdered sugar, and instant coffee granules (if using) until stiff peaks form.
  7. Once the brownies are completely cooled, spread the whipped chocolate mousse evenly over the top. Chill in the refrigerator for at least 1 hour to set.
  8. Before serving, garnish with chocolate shavings or a dusting of cocoa powder if desired. Cut into squares and enjoy!
