- 1 cup semi-sweet chocolate chips
- ½ cup unsalted butter
- 1 cup powdered sugar
- 2 large eggs
- 2 large egg yolks
- ½ teaspoon vanilla extract
- ½ cup all-purpose flour
- Pinch of salt
- Butter and cocoa powder for greasing ramekins
Instructions
- Preheat your oven to 425°F.
- Grease four 6-ounce ramekins with butter and dust with cocoa powder, tapping out the excess.
- In a microwave-safe bowl, combine the chocolate chips and butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Add the powdered sugar to the melted chocolate mixture and stir until well combined.
- Add the eggs, egg yolks, and vanilla extract. Mix until fully incorporated.
- Gently fold in the flour and a pinch of salt until just combined. Be careful not to overmix.
- Divide the batter evenly among the prepared ramekins.
- Place them on a baking sheet and bake for 12-14 minutes, until the edges are firm but the center is soft.
- Remove from the oven and let the cakes sit for 1 minute.
- Carefully invert each ramekin onto a plate and gently lift to release the cake. Serve immediately, optionally with a scoop of vanilla ice cream or fresh berries.
Notes
- For a richer flavor, try adding a tablespoon of espresso powder to the chocolate mixture.
- If you prefer a fruitier dessert, serve the lava cakes with a raspberry sauce or fresh fruit on the side.
