- 1 ½ cups crushed graham crackers
- ½ cup melted unsalted butter
- 2 tablespoons sugar
- 16 ounces softened cream cheese
- ½ cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 1 cup fresh strawberries, hulled and sliced
- 8 ounces semi-sweet chocolate, finely chopped
- 1 tablespoon canola oil
Instructions
- Begin by preheating your oven to 325°F (160°C) and prepare a 9-inch springform pan by greasing it lightly.
- In a bowl, mix together the crushed graham crackers, melted butter, and sugar until the mixture resembles wet sand.
- Firmly press this mixture into the base of the springform pan to create an even layer. Bake for 10 minutes, then allow to cool completely.
- In a separate large bowl, blend the softened cream cheese with sugar and vanilla extract until the mixture is creamy and free of lumps.
- Incorporate the eggs one at a time, ensuring each is fully mixed in before adding the next. Follow this by blending in the sour cream until smooth.
- Carefully pour the cheesecake mixture over the cooled crust, smoothing the surface with a spatula.
- Bake for 50-60 minutes, or until the center is set with a slight wobble. Once done, turn off the oven and leave the cheesecake inside with the door ajar for an hour to cool gradually.
- After cooling, let the cheesecake reach room temperature before transferring it to the refrigerator for a minimum of 4 hours, ideally overnight.
- To prepare the chocolate topping, melt the chopped chocolate with canola oil in a microwave-safe bowl, heating in 30-second intervals and stirring until silky.
- Dip each strawberry slice into the melted chocolate, then place them on a tray lined with parchment paper to allow the chocolate to firm up.
- Once the chocolate has set, artfully arrange the chocolate-dipped strawberries atop the cheesecake just before serving.

- For an extra burst of flavor, consider layering strawberry puree on the cheesecake before adding the chocolate-dipped strawberries.
