  • 8 ounces semi-sweet chocolate, finely chopped

Instructions

  1. Begin by preheating your oven to 325°F (160°C) and prepare a 9-inch springform pan by greasing it lightly.
  2. In a bowl, mix together the crushed graham crackers, melted butter, and sugar until the mixture resembles wet sand.
  3. Firmly press this mixture into the base of the springform pan to create an even layer. Bake for 10 minutes, then allow to cool completely.
  4. In a separate large bowl, blend the softened cream cheese with sugar and vanilla extract until the mixture is creamy and free of lumps.
  5. Incorporate the eggs one at a time, ensuring each is fully mixed in before adding the next. Follow this by blending in the sour cream until smooth.
  6. Carefully pour the cheesecake mixture over the cooled crust, smoothing the surface with a spatula.
  7. Bake for 50-60 minutes, or until the center is set with a slight wobble. Once done, turn off the oven and leave the cheesecake inside with the door ajar for an hour to cool gradually.
  8. After cooling, let the cheesecake reach room temperature before transferring it to the refrigerator for a minimum of 4 hours, ideally overnight.
  9. To prepare the chocolate topping, melt the chopped chocolate with canola oil in a microwave-safe bowl, heating in 30-second intervals and stirring until silky.
