- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup semi-sweet chocolate chips
- ½ cup rainbow sprinkles
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the chocolate chips and rainbow sprinkles until evenly distributed.
- Spread the cookie dough evenly into the prepared baking pan.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Allow the cookie cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Cut into squares and serve.
Notes
- For a fun twist, try adding different flavored chips, like white chocolate or peanut butter chips, in place of some of the chocolate chips.
- You can also top the cooled cookie cake with whipped cream and additional sprinkles for a festive touch.
