Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda

  • 1 cup semi-sweet chocolate chips
  • For the cookie dough topping:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the semi-sweet chocolate chips.
  6. Spoon the brownie batter into the prepared mini muffin tin, filling each cup about 2/3 full.
  7. Bake for 10-12 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Remove from the oven and let cool completely in the tin.
  8. For the cookie dough topping, in a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  9. Mix in the vanilla extract. Gradually add the flour and salt, mixing until combined. Fold in the mini chocolate chips.
  10. Once the brownie bites are completely cool, use a small cookie scoop or your hands to form small balls of cookie dough and place one on top of each brownie bite.
  11. Chill the brownie bites in the refrigerator for at least 30 minutes before serving to allow the cookie dough to firm up.

Notes

  • For a fun twist, add a pinch of sea salt on top of the cookie dough before chilling for a sweet and salty flavor.
