- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract

- 1 cup semi-sweet chocolate chips
- For the cookie dough topping:
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the semi-sweet chocolate chips.
- Spoon the brownie batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake for 10-12 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Remove from the oven and let cool completely in the tin.
- For the cookie dough topping, in a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Mix in the vanilla extract. Gradually add the flour and salt, mixing until combined. Fold in the mini chocolate chips.
- Once the brownie bites are completely cool, use a small cookie scoop or your hands to form small balls of cookie dough and place one on top of each brownie bite.
- Chill the brownie bites in the refrigerator for at least 30 minutes before serving to allow the cookie dough to firm up.
Notes
- For a fun twist, add a pinch of sea salt on top of the cookie dough before chilling for a sweet and salty flavor.
- Substitute the semi-sweet chocolate chips with dark chocolate or white chocolate chips for a different taste.
