Ingredients

  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (for filling)
  • 1 tablespoon lemon juice
  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 1/4 cup heavy cream
  • 2 teaspoons vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until well combined.
  4. Stir in the boiling water until the batter is smooth (the batter will be thin).
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.
  7. While the cakes are cooling, prepare the strawberry filling. In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Let it sit for about 30 minutes to allow the strawberries to release their juices.
  8. For the frosting, beat the softened butter in a large bowl until creamy. Gradually add the powdered sugar and cocoa powder, mixing well. Add the heavy cream and vanilla extract, beating until smooth and fluffy.
  9. Once the cakes are completely cooled, place one layer on a serving plate. Spread the strawberry filling evenly over the top.
  10. Place the second cake layer on top and frost the top and sides of the cake with the chocolate frosting.
  11. Decorate with additional fresh strawberries if desired. Slice and serve.

Notes

  • For a richer chocolate flavor, add 1 teaspoon of espresso powder to the batter.
  • Substitute the strawberries with raspberries or blueberries for a different fruit filling.
