Description
A delightful and easy-to-make Chinese Egg Cake recipe perfect for beginners.
Ingredients
Scale
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup vegetable oil
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper for easy removal.
- In a large mixing bowl, beat the eggs and sugar together with an electric mixer on high speed for about 5-7 minutes, until the mixture is thick and pale.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gently fold the dry ingredients into the egg mixture using a spatula, being careful not to deflate the batter.
- In a small bowl, combine the vegetable oil, milk, and vanilla extract. Gradually fold this mixture into the batter until just combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then carefully remove it from the pan and let it cool completely on a wire rack.
- Once cooled, dust the top with powdered sugar if desired before serving.
Notes
- To enhance the flavor, consider adding a teaspoon of almond extract for a nutty twist.
- You can also incorporate fresh fruits like blueberries or raspberries into the batter for added texture and taste.
